How to make your own chai spice mix and nut milk chai

Make your own chai spice mix for a creamy and comforting vegan drink to enjoy all day, all year without any hidden additives and sugars.

The chai spice mix makes a perfect gift for birthdays or holidays. Put it in a pretty jar, make a cute label and give to a loved one.

To make the chai, you need to make the chai spice mix first.

Chai spice mix

  • ⅓ cup cinnamon chips (you can use about 5 cinnamon sticks instead)
  • ¼ cup cardamom pods
  • ¼ cup anise seeds
  • ¼ cup coriander seeds
  • 2 tbs black peppercorns
  • 1 ½ tbs whole cloves
  • 1 tbs fennel seeds

Combine all the spices in a jar.

To make the chai

  • 2 cups water
  • 1 tbs chai spice mix
  • 1 – 3 cm fresh ginger
  • half cup of homemade nut milk – strained almond or hazelnut work really well.

Bring the 2 cups of water to a boil. Put the chai spice mix and fresh ginger in a tea sieve. Put the sieve in the boiling water.
Lower the heat and let simmer for 10 minutes. Towards the end of the 10 minutes, add the nut milk and let simmer until nut milk is warm.
Remove the sieve (careful, it will be hot).

Pour the chai into your favourite mug, sit back and relax!
