Nourishing spinach salad

A balanced diet will bring balance and nourish you on so many different levels. 

Spinach Salad recipe Ekhart Yoga

With lots of iron and antioxidants in the spinach and carrots, anti-inflammatories in the turmeric and nutrient-packed walnuts, this spinach salad aims to do just that!


  • 2 cups fresh spinach
  • 2 tomatoes
  • 2 carrots
  • 1 red chilli pepper
  • 1 tsp turmeric
  • ⅓ cup raisins
  • 2 tbsp coconut flakes 
  • ⅔ cup walnuts
  • ⅓ cup sun-dried tomatoes
  • olive oil
  • cinnamon
  • cumin (optional)
  • salt


Wash the spinach and cut it into smaller pieces. Place in a large bowl. 
Cut the tomatoes and add them to the spinach. 
Grate the carrots, mix in the chopped chilli pepper and turmeric and transfer to the bowl.
Add the raisins and coconut flakes.
In a blender (or use a knife), chop the walnuts and sundried tomatoes until they are crumbly. Sprinkle on top of the salad.
Add olive oil, cinnamon, cumin and salt to taste.
