Vegan savoury oats recipe

This is an easy-peasy, fast and nourishing meal. Perfect when you need to warm up and fill up in a healthy way.

This recipe is all about simplicity and ease. It makes a really good post-yoga meal like healthy, fast, comfort food. 

Ingredients

  • 1 cup of oats
  • 2 cups of water
  • 3 stems dried wakame (seaweed)
  • 1 eggplant (aubergine)
  • Sprouts of your choice
  • 1 tablespoon olive oil 

Method

Cut the wakame in pieces and put in a pan. 
Add the oats and water and cook until the oats are done.
Meanwhile, cut the eggplant into thin pieces and grill those pieces with some olive oil. 
Transfer the oatmeal and eggplant to two bowls. 
Add the sprouts of your choice (read about how to sprout your own). 

Share with a loved one, or, if you’re super hungry, eat by yourself. 😉

Options and alternatives

Personally, I like my oatmeal plain and simple. However, feel free to add pepper, salt, coriander, cumin, tamari and/or sambal badjak. 

You can use spinach or other sturdy greens like kale in place of the wakame. If you don’t have sprouts you can add nuts, toasted seeds, grated raw carrot or beetroot.
